Walker Seafoods Australia are best in class of the east coast tuna fleet. The fishery is managed with the highest regards to sustainability, and the fishery is currently undergoing full assessment for the Marine Stewardship Council sustainability accreditation.
Wild harvested by hook and line to the sustainable standards set by the Food and Agriculture Organisation of the United Nations (FAO) and Australian Conservation Act, all fish are landed live on the line and ike jime brain spiked, the most humane method of euthanizing the fish and retaining the upmost culinary integrity.
The range of sashimi grade fish are graded by a team trained to the highest Japanese standards to select the highest quality tuna and swordfish.
The fish from Walker Seafoods is available as professionally graded whole fish, or graded skinless, boneless loins – wrapped in traditional Japanese wasabi rice paper which naturally preserves the fillet by preventing oxidisation.
