Profile

Patagonian Toothfish is one of the world’s premium table fish. Its white flesh, even texture and subtle flavours are highly prized by chefs around the world and made famous in the traditional Japanese ‘black cod’ preparation.

Caught in the roughest, harshest environment in the world. From the cold, nutrient rich waters of the Sub Antarctic nearly 4,250 kilometres south of Perth, Glacier 51 Toothfish is a Marine Stewardship Council (MSC) certified sustainable fishery.

The properties of Glacier 51 toothfish are quite unique.  The skin is black and the flesh is white with no pin bones. When filleted, it is a solid piece of white flesh. It’s delicious, rich and creamy flesh has great culinary versatility.

High in omega 3, sustainable and with eating characteristics like no other fish, Glacier 51 Toothfish is fast becoming the fish of choice with high calibre chefs around the world.

Range

Rapid frozen individual, skin-on fillets, approximately 2.5-3.0kg per piece, packed in a pair from a single fish, per box
